Printer misery - Epson printer stopped working

Printing is driving me crazy in Linux!

Yesterday, my Epson Et-2825 was still working fine (after I had spent several hours to get it working last week).

Now it won't print anymore. The printer had disappeared from System Settings, so I tried to re-install the drivers.
The Epson print utility can communicate with it and shows the correct ink levels.
I can scan from it just fine.
But any print jobs get refused. They appear in the queue, but they won't print. This is crazy!

And I can still print from my Windows PC.

Nothing has changed on the printer side. Why is printing so complicated and unstable
