I have an A1466 and am locked out of the O/S. I want to WIPE the SYS and install 2110. I'm looking in the forums for the how to guides and am unable to find them. Please help.

Is there a "How to guide" for installing over Apple o/s?

There probably isn't one specifically for Macs on Kubuntu, as it would work the same as in Ubuntu.
But other than the steps required to boot the Mac via USB (pressing the Option key during boot?), the installation process seems be identical to installing Kubuntu in general.
I suggest using something like Balena Etcher to create the USB, or Rufus. Unetbootin may be fine, but sometimes it seems prone to making bad sticks. Etcher has not yet made a bad one for me, over quite a few years now. it is also dead simple to use.
