What are you trying to do with Java?  If you just need the browser plugin, install the icedtea-java7-plugin package:

sudo aptitude install icedtea-java7-plugin

However, if you need the JDK, I would suggest installing the openjdk-6-jdk package since Sun's opensourcing all their code, but if you're set on the closed-source version, install sun-java6-jdk.

As far as your soundcard goes, Creative has released a beta 64-bit Linux driver for its X-Fi cards, but I'm not sure if it's included in *buntu.  It should be easy to compile and install manually following the instructions on the page, but I'll help with that too if you need it.
