Looks like they have finally decided on a more sane route and you can now report issues with Steam for Linux at github :S

I would suggest verifying the game cache, then deleting config files that the games might have created.

You can get a current list of supported games here. They may or may not have demos though but quite a few where in humble indie bundles, so if you have bought any in the past you should be able to obtain the steam keys and activate them (this is what I did)

edit: you can also now search for Linux games in the store.

If they dont start I suggest running steam from a terminal, try to start the game and see what output you get... it is most likely you are missing a library needed to run the game and this should tell you which one. Once you know which one is missing head to your package manager and search for it. If you are on 64bit then install the 32bit version as steam is a 32bit application.

I think this will get better as the beta progresses.

If this fails tell Valve about it thats what the beta is for.

I have but it is not overly different from the workaround, still have no tray icon...

Only difference I can see is that I can start it normally and post bug reports on their forums (don't know why they use a forum as a bug tracker.... there are so many better ways of doing that out there)
