In 24.04, the user could change a taskbar icon by right-clicking it, selecting "Properties," and designating a different icon. That function appears to be gone in 26.04, but I assume it still exists, and I have just missed it. (Removing that functionality would be truly Microsoftian, and I have more respect for Linux than that.) Thanks.

It depends on if the app is pinned to the task manager, or is a separate launcher icon (using the "add to panel (widget)" option in Plasma 5, or dragged to a panel in Plasma 6), and not part of the task manager widget itself.
For apps that have been pinned to the panel, you just need to use the menu editor, or right-click on the entry in the menu itself.
This hasn't changed between 24.04 (and probably earlier) and the current Plasma 6.
