Is there a way to have a finer value of increments/decrements in the Kmix volume controls? Currently it increases/decreases in counts of 5. I would like to have the ability to control it in counts of 2 or 1.

It provides per-app volume control and you can make plasmoid wider what will allow to adjust volume more accurately with mouse. I am not sure if I understood you correctly but this is enough for me to adjust volume level. I never needed to use any additional options. Yes, you've misunderstood. I have implemented it, but will not put it in the GUI. If you want to change it, please quit KMix, and edit the kmixrc configuration file. In the [Global] section. add VolumePercentageStep , e.g:
[Global]
VolumePercentageStep=2.5
This means 2.5%
This goes live with KDE4.8.
